Thought we could all share a few recipes that we know for Christmas, I know there are a few chefs lurking around on here.

Proper stuffing.

2 packs of Sausage meat.
Packet of dried chesnuts
Half a loaf of breadcrumbs (just stick em in the blender)
Fresh Sage
Dried apricots
1 or 2 eggs
Salt and pepper

Open the sausage meat onto a plate, the breadcrumbs should equal about half the size of the meat, chesnuts should equal half the b/crumbs, apricots should equal half the chesnuts, mix it all together, add the eggs to bind it together, just use your clean hands, add the salt and pepper, use half in the turkey and roll little balls to go with the pigs in blankets.

Lebkuchen /Soft Spiced German Ginger bread



-- COOKIES --


  • 5000 g Honey
  • 1429 g Sugar
  • 1 pinch Salt
  • 30 mils Vegetable Oil
  • 30 mils Water
  • 1 large Egg yolk
  • 5 mils Cocoa powder (heaping)
  • 2 mils Lemon zest
  • 1 pinch Mace
  • 5 mils Cinnamon
  • 7143 g Whole wheat flour
  • 15 mils Baking Powder
  • 2143 g Almonds ground
  • 2143 g hazlenuts ground
  • 1429 g Candied lemon peel chopped finely
  • 2143 g Dried apricots chopped finely
  • 1 package Baking wafers (obladen), optional
  • 1 large Egg white optional
-- ICING --


  • 3571 g Powdered sugar
  • Water
  • or chocolate covering


Preparation


Note: the baking wafers / edible ricepaper are sold in specialty kitchen shops. If you are not going to use them, you don't need the egg white.

1. Preheat oven to 350. In a saucepan over medium heat, Slowly heat the honey, sugar, salt, oil and water until sugar is dissolved. Put in a mixing bowl and allow to cool.

2. Sift the flour and baking powder together.

3. Stir egg yolk, cocoa and spices into the honey mixture. Slowly mix in the sifted flour mixture, and when it is smooth, add the rest of the cookie ingredients.

4. Roll out to to about 1/4 inch thick and use a cookie cutter or glass to cut out 2 inch rounds. If you are using the baking wafers, brush a wafer with egg white and stick to the bottom of each cookie.

5. Place cookies on a greased cookie sheet. Bake for 15 - 20 minutes.

6. Remove from oven and allow to cool. For the icing, mix water gradually into powdered sugar until it is the consitency of heavy cream. Brush icing, or melted chocolate on each Lebkuchen cookie. Allow to dry.

Store in a cookie tin and enjoy!!!

okay heres the xmas pudd recipe,,best made a couple of months before xmas right enough but hey ho.

2lbs of white fresh breadcrombs
1.5lbs of suet
1.5lbs of raisins
1.5lbs of currants
0.75lbs of mix peel
0.75lbs brown sugar
2 lemons rind and juice
2 teaspoon mix spice
9 eggs
3 glasses of rum
2 cans guiness
half glass whiskkey


method.. put all in large bowl and mix ..cover and leave out overnight,then put into greased foil bowls and cover tight with greaseproof paper and foil..steam for 8 hours

6 cups cold black coffee strong

6 cups of whiskey

6 tins of condensed milk

6 large tins of evaporated milk

6 teaspoons of glycerine

6 teasponns of vanilla essence

simpley mix the lot with a whisk and bottle will last 4 to 5 weeks in fridge

for the ladies replace the whiskey with tia maria:thumbsup:
