Dutch company and the dutch tile setters are top notch sand&cement fixers (mortar). In the uk sand&cement fixing (walls) was finished maybe 30+ years ago at the time I was serving my apprenticeship, other than the odd job here and there. This method is obviously still used frequently in holland. I found this out during one of many visits to germany while working with dutch tilers, these were young lads and there work was first class( mortar fixing) as you say its sorts the men from the boys.
