For me number 3.
The shield one is a bit cliche
The second one is ok
The third just looks more classy. Depending on the image you are trying to put out and the clientelle you want to attract.
One observation though. On design 3 don't have the tiling in heavier font have the Knights in the heavier type. For 2 reasons really, the blue is a strong colour and over powers the red and Knights is your name so if anything needs emphasis it's that.

I'm sure you'll get plenty more feedback.
