Just done a similar interlocking split faced and yes there can be some gaps. However it's sometimes the edge of the tile thickness that is lighter than the face which accentuates an uneveness. Also on some the backing adhesive that binds the pieces together can show on the front face , making it look as though your adhesive has come through the joints.
Mix up some black grout and point in the worst gaps.
