I check all levels on a floor before commencing with the tiling...
If it is reasonbly level then i will lay the floor level but sometimes a floor can be out of level by quiet a bit so as long as it is flat then it will be ok...
SLC helps a long way to getting a floor flat for tiling....

It also depends on what you are putting down..i.e. ceramics etc or rough cut naturals...rough stone doesn't need as good a floor as say honed stone and so on....

I usually just do it flat.I tell the customer I can get it level if they want but some things like kitchen units don't look right if they were put on the original floor which could be quite out.

Just finished working on a bathroom showroom and the few floors I did I laid as flat as possible,I didn't know whether to bring a trowel or a surfboard they were that out. Some of the other guys used a level and got it totally flat but when it came to meeting the walkways there was a step in some places of at least an inch which looked awful and was a major tripping hazard, they might have to come back up.
