Hi Richard,
Your method statement should set out how you intend (and anyone you sub to) to do the works. Listing adhesives and other materials and there uses. Your risk assm't should cover aspect of H and S re the work and materials. The risk you take in taking on the contract is yours and shouldn't be included in either of the above. You'd probably frighten yourself to death if you did.
