Really it comes down to how much you want to earn in the day I think, guestimating the time it takes to pull off old tiles and make the walls good enough to re-tile is always tricky though. So try to be clear with the customer and make them aware of possible extra costs, as Varley says.

I'd avoid a per meter or yard rate at all costs, and probably try and quote for X amount of days at X per day instead.
