I always firstly ask them to do it themself. If they want it done then I tell them I'll do it on a daily rate and would 'estimate' 1 or 2 days more i needed but not usually. Then if I run over I'm still payed, its a job I dont like so want payed well for it. If it takes me a day and a morning I'll still take the 2 day rate. Then I quote the rest of the job as normal ontop.
Prob with removal, you never know how easy they will come of, 'estimate and daily rate' mate.

If you are going to remove tiles it is very important to inform the customer that until you have removed the tiles and seen what state the walls are in you cannot give an exaxt price on the job, worst case senario they may need a plasterer. Some tiles come off nicely, others will literally rip the wall down with them.
