I think you may be confusing "food preparation" areas with kitchens. If you are grouting a tiled worktop then it is advisable to grout with epoxy as it does not harbour germs and is very easy to clean. Splashbacks on the other hand are not actually used to prepare or contact the food.do you have to use epoxy or am i right in thinking its up to the customersd budget?
