What size is the travertine ?
Is it rectified edge or tumbled or chiseled etc ?

2mm max for me with stone on walls but if tumbled then sizing can be an issue and tight joints won't always work.
Take each job at face value I say.

As for the grout 3000 , its a good grout and sets fast enough to prevent edge leaching/framing.
