Wall prep

Hi, this is my first post here! I've agreed to help my father tile a bathroom wall in an old house he's just bought. The walls are far from smooth and far from level! What's the best method of getting the wall true? It's an old stone wall so some bits are worse than others!

The finish is really bad! It's as though its been lime plasterd but you can make out almost every stone edge! There's just over an inch between the lowest and highest point in the wall!!

What about the stone to which the lime mortar has been applied....

I'm not too sure what the stone under it is to be honest! How much difference would the type of stone make?
