The square at the back in the handle should sit on top of the breaker bar, that's how to correctly adjust for different tile heights. Flip the breaker pad down while resting on the tile and adjust it to suit. Poor picture but it shows what your looking for.

Without starting a brand war I'd say Sigma 3C3M is a good all rounder. 72.5cm cutter so should cover most bases and with the push scribe be a bit easier to use.
You will soon get fed up using that size cutter for metro tiles though.
Does your end that tails off always happen at the same end of the cutter? You may need to adjust your cutter for the correct height of the tile
Try double scoring the end that is not braking correctly. you could just be missing some pressure on the scoring action.
Try slowly breaking the tile...
Yes you can change the handle no problem. It's around £70 ish to buy the handle alone though.
If you feel you would prefer a push but by monday then maybe Monti is the way forward

I use a Sigma 3C3M which is the max version and push handle of the 3C2 you have mentioned, I can't fault it. I personally prefer the push over pull to score.
It's a hard one to answer for someone else as we all stick to what we know works and what we are used to, some like JCR have jumped ship...
What are you using now? If I didn't have my sigma fleet I think I'd go down the Monti route. @antonio can probably help, he has had just about every tool going 🤣
