Mm, try getting an SR1 finish on anhydrite, then add the faff of removing the laitence and priming..........

where SR1 is not achieved just as with any other substrate you can use a smoothing compound. That said the vast majority of flowing anhydrite screeds installed by sensible and reputable contractors do meet SR1 or better.
 
The last 3 I have tiled (all installed by the same contractor) have been the best floors I have ever tiled. I doubt there's so much as 1mm over 3m deviation.
I've never before tiled 50+sqm in one day!

(I've seen plenty of shocking liquid screeds though!)

as in all trades there are those who are less than zealous or scrupulous about standards of installation... I think though in the main where they have been trained properly they are mostly ok...
