I have even been known to cook the pork JUST FOR THE CRACKLING ! :drool5::drool5::drool5:

When I cook a pork roast I always provide a few strips of crackling as well as home made apple sauce (and usually roast potatoes). I don't eat it but OH does.

Pour boiling water over the rind, pat dry, score into strips with a sharp knife just through outer rind and salt before roasting. The boiling water does make a difference.

Near enough Rob, the rind is crisped as the joint is cooked and then eaten straight off the joint.. crisper the better for some.. me.. YAK!!

I dry the skin then oil it and then salt it. Oil helps the salt stick too.

My ex used to work in a pub and the local butcher used to give them a bag of pig skin to roast up for the pots on the bar. There was a nipple on one of the bits and after sticking it to our chests to look like a triple nipple we cooked it and put it in a bag of other bits to a bloke we didnt like.
