If it's a concrete floor it may need a self levelling screed first.
If the concrete has under floor heating pipes you may wish to consider an uncoupling membrane which will eliminate shrinkage cracks transferring through to the surface of the granite.
You will require a flexible cement based adhesive and flexible grout.
Without being able to view the work a guide to the accuracy of your estimates just based on 27sq mts is impossible. However before accepting any of the 3 you should satisfy yourself that you will be happy to have one of them do the work, be prepared to pay what the chosen one wants, see examples of their previous work in granite and ask them to break the costings down so you understand what you will be getting for your hard earned cash.
If you post your location or request an estimate here on the Forum, you may find a tiler in your area.
Good luck and Welcome.

i think i would find out what the tiler that is talking about this special coating is on about, granite is one of the hardest products and i cannot see it cracking, what i would make sure of is to make a expantion joint in the doorways in case the concrete was ever to crack and remember the cheapest one is not always the best option and neither is the dearest go with the one that you feel knows what he is talking about, good luck
