My mrs bought me a wine making kit for Christmas. Brew 6 bottles in 7 days. Not sure yet and hope it doesn't taste like it was brewed in 7 days. Have had a go at wine in the past but with limited success so would not be able to offer much in the way of tips. On the basis that I will drink pretty much anything (apparently) I will give it a shot and see what happens. Will let you know.

My Dad used to be a keen home brewer though. My Brother in Law used to run a Pub and one evening ran out of one of the most popular beers (was a John Wilsons Pub - not sure they even in business any more). Anyway as the darts team had a match on that night he decided to put on a barrel of my Dad's homebrew without telling the punters cos running out of beer would have probably led to a minor riot. Unfortunately it turned out to be really good beer but was significantly stronger and we had a pub full of people who would normally drink 4 or 5 pints in an evening who were rolling drunk after just a couple of pints and could not understand why. The Darts team lost that night but really didn't care very much.

Brewed wine many years ago before you could get your own corking machine and used plastic caps - must have put to much sugar in one lot as it blew the caps off during the night - made a very abstract redecoration of the spare room.

Also in the 70's when living in Norway got my mother to end me some home brew {bitter} kits as I wasn't keen on the flavour or price of the local ale. The first couple of batches were a bit tasteless so I spoke to the manufacturors, Geordie Home Brew {don't know if they still exist} and they said to add extra sugar and sent me a hydrometer that showed %alcohol to llbs of sugar per gallon.

Any way I went for the max on the hydrometer and couldn't understand why everyone was getting squiffy on two pints. It wasn't til some years later I found out I was making it the strenght of Barley Wine which is only served in 1/3rd pint bottles.
