Poor natural slate flooring!

Yes that could have been a great ‘look’!
I think a big more care/experience should have been given and perhaps a decision on its acceptance before the installation of the kitchen.
 
Can you not chisel the high spots of slate off?
They should split very easily as slate is built up in layers .
You can but you have to look for for fissures and avoid them or else half the tile will come up. Also you need to consider how the “grain” of the slate runs. Start with a small thin slither from top and work slowly down don’t get greedy.
 
I probably would have laid it differently. I always grade the slate into 3 piles thick, medium, thin and then start with the thickest. I never use spacers with slate but go with a line and would go minimum 4 mm joints. Any joints that are too tight, I run the grinder down them to make them more uniform.
As we all know, slate always comes in different sizes.
More care should have been taken to grade the slate to similar thicknesses.
