What size is best to do a shower wall some Substrate is plasterboard and it does have some low spots ie dips?

Yes.....is there another I don't know about for tiling.

No actually, the main trowel is a Ragni 8mm

I'd be addressing the condition (flatness) of the wall before tiling! Your hob is only ever as good as the prep work!
