wall out of true

hi All,
i have took all the tiles of the wall and the old addy and now want to tile it i have put a level on the wall and the wall is not level any help on the matter please?

The only way to get the wall straight and true is to either skim with tile adhesive or to replace with new plasterboard, what is the make up of the walls? are they in good order?

it is a old brick and plasterwall and it is out of true of about 5mm
 
Sometimes those walls have plasterwork that has de-bonded from the wall itself, it may appear sound but once you start taking it off it just falls off. What are you putting on the walls tile wise? weight issues should be considered if they are heavy tiles.
Would it be in your re-mit to strip away the plaster and re-board, you will certainly get more peace of mind.
