The walls are fresh skim, so nice and flat, i was gonna use a mapei tub ad but coz of size, i'm not so sure, for the floor i'll use a cement based powder, what would you reccomend and what grout please..?

Do you assume because fresh skim that they are flat? i often find this can be the worst surface to tile on to! Get a 1.8 meter feather edge or level over it and check the walls are ok! I would go with 10mm round notch trowel for both walls and floor IF they are straght! :)
