Done alot of these recently and as grumpy says where you use trim make sure the tiles are cuts because if one is a cut then the one above is a finished tile it looks awful.
 
Like the others said mate, start in the middle and then if the worktop is a bit out it will cause you less of a problem. I just tear bits of the box of tile and make my own wedges as I go.

This is with 3mm spacers,

I always use 3mm on walls unless asked for something different
