I wouldn't , as it costs more to pay in cash than bank transfer. Even a cheque is cheaper.
That's exactly right, you should charge more for accepting cash as payment.

Just to repeat, the customer gets the benefit and you take the risk if you're not declaring it, which is just plain stupid!!!

Well say I do a job that I invoice for £1000 and the customer pays by cheque, it costs me 53p to bank the cheque, bank transfer is free and if the customer pays cash it costs me 38p per £100 I bank, therefore that job has cost me £3.27 more for cash, hence I should be charging more for a cash payment
