i fix i a similar way to this, the bloke in the video, has his float bed, as he calls it ,mixed too wet and there is no need for the adhesive , slurry mix is better ,he would need to be backing his tiles with rapid set as slow set doesnt work well when fixing like this , the only benefit when fixing like this is you can lay stones of differing thicknesses to a perfectly flat finish
here are some pictures of me laying a floor like this where the substrate was asolutely knackered up and down all over the place as i say i use a slightly differnt method that the old timer italians used to use

it would work but a bit crazy the adhesive on the floor and the tile with screed in between or else the screed wouldn't adhere but whats the point only if you have a in between thickness not deep enough to screed to deep for adhesive but would take a long time to lay and dry if you are laying on screed skim the tile or slab with adhesive it will never come up : Pete
