My girlfriend's cousin is a plumber and also said he could do the tiles...turns out he can't!

Our bathroom is now fully tiled but the edges of the tiles look awful (they're just finished with Silicon) and my girlfriend cut herself on one the other day.

I've looked into edge trim but they all seem to have to go on prior to tiling, does anyone know if there's trim/edging I can stick on post-tiling to save ripping everything up?

Should have been trimmed before tiling as you say. Have a look at Genesis at Home. They do retro fit tile edge protection strips which may do the job. Failing that and probably a bit cheaper is to maybe try and take off the sharp edge of the tiles with a diamond file or sharpening stone. Won't improve the appearance though!

The best way would be to remove the edge tiles as you say and then fit the trim and re-tile. Be aware that the removed tiles will need trimming again to fit properly!

Can't see how you could just remove the Silicon and then stick edge trim to tiles - it would not fit correctly and would look a bit strange I would have thought.
