I've just done the same last week,firstly i put a light skim on the tray so that the wire just shows through this means that the falls are kept the same as if it were bare then using a plastic trowel (b&q) after it has hardened you can lay a bed down being careful with the trowel you can keep the falls, check things look equal falling to the gully using a couple of straight edges across corners and square to the gully if low or high you can remove or add adhesive as appropriate.
