There is a few types of tanking. It is a way of waterproofing your substrate. As you have plasterboarded the walls I would recommend a liquid waterproof membrane. Try mapigum you can paint on or apply with a trowel. It is important to tape all corners and were the boards meet. Also we're the boards meet the bath/tray/floor.

because the shower tray, is just in the corner..... do I only need to " tank the corner section, or do I have to do 2 complete walls?

Do the entire shower area and about 1 metre outside also, so probably do both walls unless your bathroom is massive!
