You only charge V.A.T if your V.A.T registered.

As to how you charge for your labour then that's entirely upto you.

How much do you need to earn a day ?

Some price up by the sqm if it's a big job, some, like most maybe look at a job and work out a price for what evers involved.

There is no set way of pricing up a job as their all different.

I usually factor in the travel time in the rate. For me. anything local i.e 30 miles is absorbed as a cost really. Over that I personally would increase my day rate to compensate but to price separately for travel is your decision.

As for the rates you charge, that will depend entirely on what you need to live on, the competition in your area and the reputation you have. If your work comes via referral then you are more valuable than if you have to chase it.

I never add anything on for traveling as all my work is local, but If I was asked to do a job further out than normal then depending on what the job was I might add on a little to cover the extra fuel expense I wouldn't normally incure.

Also there ain't much point in charging £180 a day if the norms £120 in your area without being a master at selling yourself or having a good enough reputation to warrent your high charges.
