Does anyone know where sells and what options there are for the little corner shelves that trap between tiles?

Get glass ones made to measure at a local glazing company .

You could make your own? Even retro-fit into the grout joints using some stainless steel repair washers, bonded in like biscuit joints using an epoxy such as tenax.
Pretty easy actually. Easier when tiling though.
