Also, interesting that he used a full tile coming out of the corner!?

I have to admit I can see 1 use, when fixing mosaic sheets you can support more pieces at once, though they shouldn't really move when fixed anyway. I don't know what thicknesses are produced but the last mosaic sheets that I fixed had a 3mm spacing in the sheet. Would look a bit odd to have a 2mm spacing between sheets and 3mm grout line on the sheet.
