Quick question regarding metro tiles. If the walls are relatively flat and tiles aren't bowed, will there still be a problem with lipping if done brick bond with the tiles being a smaller format (200x100)?

I have a small splash back to do, 200x100 ceramic metro tiles. It's mainly brick wall.....some render, a ply box and some of what looks like Caber board on the wall. What would be a recommended adhesive for this ? Also.....I need a fine grout as not to scratch the tiles, help please...
