The floor may be level but more importantly is there any deflection (bounce). If there is then that could cause a problem. Firstly before putting anything down, make sure the floor is screwed down at 300mm centres and that the screws you use wont rust.
When you say the gaps aren't big how big do you mean as DITRA will only bridge a gap of three mm.
If you do use DITRA then use a rapidset adhesive to stick it to the floor and the same to stick the tiles down.
If the floor has no bounce the gaps are small and the floor is unlikely to move then probably the best thing to use would be a 2 part rubberised adhesive such as BAL fastflex of Weber WF21 (plenty more are available).

use something like no more ply to board out the bathroom, you can get it from any decent tile supplies shop, its completely rot and water proof, use a white rapid set powder ( i use granfix) because grey can stain travertine, make sure you seal prior to grouting and afterwards, hope your charging £35 + per metre plus materials

put the ply down using the screws and special washers supplied, seal the joints using no more ply sealer, acrylic bond it and lay the trav, get the loo and pedestal out if you can for a better finish, its straight forward but if your not sure then get hold of a plumber( customer pays for that) your a tiler not a plumber, allow two days at £150 per day plus your materials, job done good luck,
