the tiles are drawing in the moisture from the addy and if the tiles are sealed the moisture is staying in the tiles as the sealer is acting as a moisture barrier.
try putting a fan heater over the tiles it may help to dry them out
They haven’t been sealed yet so hopefully they will dry. I will leave it a week or so more and see what happens

After seeing the depth of adhesive on the back of that tile you've shown, maybe it's the angle but it looks as deep as your thumb in places so 20mm? These are going to take forever to dry out.. yes you've got pretty much full coverage but it looks well packed out ( if you think about it an open screed takes 1mm a day to dry naturally) Now the moisture has to slowly find its way out through the stone, even unsealed it's going to be a very slow process and the only way I can see of speeding it up, even a little, is going to be a dehumidifier and airflow..
