Here's one I did with an access panel in the floor

I would always trim a matwell, it's an edge and it's no different to any other exposed edge in my opinion

When you think about it every type of flooring has some kind of transition bar when it comes to a stop.

So ...what would you do in a doorway where a tile meets a carpet..?

leave it to the carpet fitter

but what looks best is carpet treating the tile edge as skirtings

Depends on the job, a mat well is gonna have a mat in which may not be as thick as the tiles, and gonna get a lot of trafic and people wiping there feet, with porcelain tiles yes I would trim it for sure, maybe not with stone.

I understand what your saying but I'd buy a thicker mat or raise the floor under the mat, leveller or sheet of board to get the mat top above the tile edge
