Recess for door mat

The traditional way is to have a recess in the floor and lined with a metal strip as all tiles will eventually chip without a protected edge and also some doors are are set very close to
the floor,last thing make sure you have the right size mat
and set the recess 5mm larger than the mat as mats tend to spread after a while.
 
Personally I have always used trim but I can see the appeal without especially with stone. I would be worried about chipping edges and might be tempted to lightly bullnose or sand the leading edge.
 
I've done it with and without depending on type of tile and client opinion. In my own house, with saltillo terracotta, I used oak to match the oak thresholds in the 4 doorways in the hall.
 
all my edges are as factory finish, slight bullnose / rounded or small 45.
Never seen one chip, even going back to jobs 10 to 12 years later
as has been said, mats are usually 3mm to 5mm high when first laid and only drop to become leave.
