I understand what your saying but I'd buy a thicker mat or raise the floor under the mat, leveller or sheet of board to get the mat top above the tile edgeDepends on the job, a mat well is gonna have a mat in which may not be as thick as the tiles, and gonna get a lot of trafic and people wiping there feet, with porcelain tiles yes I would trim it for sure, maybe not with stone.
