hiya colour, i cost is no problem id be going for henkels or globals,personally i preffered a heavier knife for working so opted for gustav dropped forges,but the globals are the best i would say and also more pleasing to the eye to look at as they are all silver as oppose to black or rosewood handled knives.

not sure what these japanese knives are however i tried using both james martin knives and also anthony worrel thompson endorsed knives both were binned in a fortnight lol

I have heard of all those but heard good things about the Henkels and sort of discounted the wooden handle ones. The Globals look beautiful and i didn't think they were much more expensive than Henkels, If i'm going to start buying them cost isn't really that much of a factor as I want them for life, I want to make the right choice on this one as it could be a costly mistake if I go for the wrong one.

Which would you say feels the nicest in the hand, balance wise?

A friend of mine runs Jamie Olivers Recipease in Brighton and they have some Japenese knives in there (not his own brand) that I want to try out, they do a knives skills course where you get to try them. Can't remember the brand now. I wouldn't buy them just because it's endorsed by Jamie but thought i'd give them a go


are you buying the knives online or from a local shop? you can ask to handle every knife before you buy it if you prefer to get the feelof the knife correct for yourselfs in the shop,,

:lol::lol::lol: I bought the same set, I would have liked to bury them in him after buying them, he really does endorse some rubbish! I binned mine too in similar time. The knives in Jamie's aren't endorsed by him, he just stocks them and they are in the Heknels price range (can't find them on his site)

I know i should support the local shops but the mark up they put on them is just too much, I know they have rent and rates and offer a service but they can be as mush as 30% more on the high street. I won't try them in store as I know I have no intention of buying from them, I do have some morals:smilewinkgrin: So trying to do my research online

I'm a bit different I like quite a light knife (unless the type of knife calls for it to be heavy) The reason I discounted wooden handle ones is for ease of cleaning, I know with wooden handled knives i'd be tempted to chuck them in the dishwasher again as bits always get stuck where the handle meets the blade

i treat myself to what i want every year, that way it doesnt matter what others buy you and they choose your present rather than looking for what you asked for

this year i bought myself some pierre finklestein books on graining and marbling

i dread to think what i would have got if id put them on a wishlist
